Easy Potato Soup

My Mom gave me this recipe a few months ago, and it has turned into a family favorite at our house! Here's how to make it.

*6 potatoes, peeled and chopped (I always use around 9-10 to make more)
*1 onion, chopped

Cover with water (just to the top of the potatoes) and boil until potatoes are tender. Don't drain water!!

Add:
*2 Tbsp. chicken bouillon
*8 oz. sour cream
*8 oz. shredded cheese

Stir until smooth.

**I add carrots and celery in with the potatoes and onion before boiling. We also like this soup with crumbled bacon on top. Yum!!

I just made a BIG pot of my potato cheese soup the other day! Yum, gotta love comfort food on a cold day :) I think I'll try adding carrots to mine next time, thanks for the idea! Have a great weekend.

That sounds sooo yummy. Too bad my husband doesn't like soup because I would love to make it. I love putting corn in my potato soup when I do get to make it :)

I made this over the weekend....I had a 10 lb bag of potatoes to use up....my 12 year old son at 7 bowls of the soup! I would say it was a hit! Thanks for the post

try adding chopped green onions on top as a garnish too with the bacon...yummy!!! Adds just the right amount of something to the soup!
